Frito Pie Casserole is made with layers of seasoned ground beef, salsa, and black beans, topped with crunchy Frito chips, tomatoes, and of course, cheese! A FILLING 45-MINUTE CASSEROLE This taco flavored Frito Pie Casserole is a super simple dish and one that is easily customizable depending on what your family loves. Just a few ingredients and it’ll be ready in only 45 minutes. All the best of the taco flavors topped with crunchy Fritos! If you haven’t tried this combo, I think you might be pleasantly surprised at how good it all works together! If you prefer this more with chili then you will probably love my Chili Frito Pie that can easily be transformed into a casserole like this one. FREQUENTLY ASKED QUESTIONS:  What can I use instead of ground beef? Instead of ground beef, try ground chicken or ground turkey. Either will work just fine. What can I use instead of Fritos? Not wanting to use corn chips? Grab any other chips. Tortilla chips, Ranch or Nacho Cheese Doritos would also work. Can I double this recipe? Yes, you can double this. Depending on the size of your serving dish, you may need to divide it into two dishes, or use a large dish for serving. How long are leftovers good for? You can keep the leftovers in the fridge for up to to 5 days, but the Fritos will get soft the longer they are in the fridge.  INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) ground beef – yellow onion packet taco seasoning– grab a packet, or make some Homemade Taco Seasoning. You’ll need about 3 Tablespoons to replace the packet. salsa – my favorite store bought salsa is Herdez but I generally only buy it when I can get it on sale or have a coupon so most times it’s just store brand but if you can, try the Herdez! black beans– Don’t like black beans? Just leave them out or try a different bean you enjoy. Rotel with green chiles – this is also optional. You may find the salsa is enough for you. frozen corn – I took a chance and added corn to this the last time I made it since I had some corn in the freezer and we all ended up loving it so it was a nice addition and I added it here. Fritos corn chips – just get the original Fritos, not the Scoops. Those might be a bit too bulky. Alternatively, if you are worried about the corn chips being a bit too crunchy, try smashing them up a bit before using them in this. Mexican shredded cheese – or whatever shredded cheese you love! For topping (use whatever you like here – these are just suggestions): sliced or diced cherry tomatoes, sliced jalapenos, sour cream, guacamole, sliced olives, sliced green onions HOW TO MAKE FRITO PIE CASSEROLE: Preheat the oven to 350° F. To a skillet add the beef and onion. Cook and crumble over medium heat until no longer pink. Add the water and taco seasoning. Simmer for 3 minutes.  Add the salsa, black beans, Rotel, and corn.
