One Pot Sausage and Tortellini

One Pot Sausage and Tortellini is a super simple yet very filling and comforting dinner recipe that’s ready in only 25 minutes! A perfect weeknight meal! A SIMPLE ONE POT DINNER This One Pot Sausage and Tortellini is definitely a favorite. It’s so easy to make and fills your belly in no time. The flavorful sausage, aromatic garlic, juicy tomatoes pair perfectly with the cheese tortellini and parmesan cheese, making the ultimate quick dinner for those busy weeknights. I like to have this as a backup when whatever I have on the menu doesn’t workout. It’s easy to whip together and it’s ready in under a half hour- can’t beat that! FREQUENTLY ASKED QUESTIONS:  Can I use more sauce? Sure, if you’re a sauce person and want more of a runny sauce, feel free to add a splash of chicken broth or cream to thin out the sauce some. Can I use frozen tortellini? If using frozen tortellini you will need to adjust the cooking time. Frozen tortellini may result in more liquid so I would use less chicken broth in the sauce. What do I serve with One Pot Sausage and Tortellini? Since this dish already has so much flavor and can be filling on its own, I like to try it with a simple side salad or a Caesar salad with my homemade Caesar dressing. This kind of dish has a delicious sauce that’s so good, and it’s even better when you can dip some crusty bread or Garlic Bread in it to soak up all the fantastic flavor. It would also be good with your favorite roasted or grilled vegetables. Do I have to use sausage? Nope! If you prefer a different kind of meat, you can swap it out. I’d suggest trying ground beef, ground turkey, ground chicken, smoked sausage, or ground turkey sausage for a yummy new dish. Can I add some other veggies? Sure. Try some diced bell peppers, zucchini, or squash when you add the onions to cook, or some fresh spinach during the last few minutes of cooking. Can I add some more cheese? Of course! I like to add some more parmesan or even some fresh shredded mozzarella to melt on top when I’m serving it. How do I store leftovers? Leftovers can be stored in an airtight container in the fridge for up to 3 days. I do not recommend freezing this recipe as the cream does not freeze well. Any tips for reheating leftovers? Add chicken broth or cream to reheat, as the tortellini will soak up most of the sauce. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) olive oil mild Italian sausage– if you want a bit of a kick swap the mild Italian sausage for Hot Italian sausage. Or you can even just use ground beef, ground chicken or ground turkey. yellow onion – I would use a small yellow onion. If your onion is large, just use half. cloves garlic – fresh garlic here. Using freshly minced garlic makes a big difference in taste! Use the jarred if you must but I highly recommend fresh. fire-roasted diced tomatoes – if you can’t find the fire roasted, just use regular petite diced tomatoes. Fire roasted tomatoes are not spicy. It is just the method in which the tomatoes have been cooked to create a char on the outside. heavy whipping cream – it needs to be heavy cream – not milk. chicken broth – feel free to use low or no sodium chicken broth if you are watching your salt intake. salt and pepper refrigerated cheese tortellini – uncooked. You could swap this cheese tortellini out for beef or spinach tortellini. You could use frozen but you will need to defrost it first to work with this particular recipe. fresh basil and shredded parmesan cheese – for garnishing. HOW TO MAKE ONE POT SAUSAGE TORTELLINI Heat olive oil in a large skillet over medium-high heat. Add sausage and cook until browned, about 5 to 8 minutes. Drain excess fat and keep sausage in the pan. Turn heat down to medium. Add onions and garlic, and cook for 2 to 3 minutes, stirring occasionally. Add tomatoes, heavy cream, chicken broth, salt, pepper and tortellini. Stir to coat and simmer over medium heat uncovered until the sauce has reduced and the tortellini is cooked through, about 5 to 7 minutes. Garnish with fresh basil and parmesan.
