Recreate old school Taco Bell Enchiritos at home with some taco seasoned beef, creamy beans, cheese, and enchilada sauce with this simple copycat recipe!
A TACO BELL COPYCAT RECIPE
I can’t be the only one who will be forever bummed that they stopped serving Taco Bell Enchiritos. Not to mention the fact that I’m still bummed that they quit serving anything with olives or green onions. Why stop serving something so delicious? I know there was some sort of issue for a while with the green onions but then they just never brought them back after that. So, I took it upon myself to find a way to make my own Enchiritos because I love them so much and I can’t be waiting on a temporary comeback every 2 years – ha! If you’re a Taco Bell lover, you’ll love this copycat recipe!
FREQUENTLY ASKED QUESTIONS:
Can I make these ahead of time? This would be great for meal prep since you heat each individual portion in the microwave. What to serve with Enchiritos? These Enchiritos are great by themselves but would also be great with Mexican Rice, with some chips and Salsa, or chips and Queso, and a nice big green salad. Can I make these without meat or use other meat? Sure, you can make this without meat or you can use cooked chorizo if you want to add some heat. Instead of beef, you can use some Shredded Chicken. These are so easy to switch up, you don’t have to keep the just like the original. How to store leftover Enchiritos? Keep leftovers separate if possible and keep them in containers in the fridge for up to 3 days. You can keep them longer by freezing them for up to 3 months.
INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE)
ground beef– other options can be used, check the FAQ section for other ideas.
packet taco seasoning– if you already have some on hand you can use a packet, or you can make some Homemade Taco Seasoning with your own mix of spices.
water
refried beans – grab your favorite canned beans or make some Homemade Refried Beans.
enchilada sauce– if you really want to make these more from scratch with the homemade tortillas, taco seasoning, and refried beans, you can also make Homemade Red Enchilada Sauce that I use with my Chicken Enchiladas.
soft taco size flour tortillas– you can use Homemade Tortillas or grab some from the store.
diced onion
shredded cheddar cheese – I think rashly shredded cheddar cheese melts the best but I sometimes just want to pick up a bag of pre shredded stuff to make it easy!

HOW TO MAKE TACO BELL ENCHIRITOS
Place the ground beef in a hot skillet over medium-high heat and cook, breaking it up into crumbles until there is no pink left, about 8-10 minutes. Drain excess grease. Add the seasoning mix and water, stir well to combine, reduce heat to low, and cook until thickened, 3-4 minutes. Set aside. Meanwhile, warm the beans in a microwave-safe bowl.
Warm the enchilada sauce in a saucepot on the stove. Now, you will assemble these individually. Place a tortilla on a microwave-safe plate. Smooth 1/8th of the beans down the center.
Top with 1/8th of the meat mixture. Add some diced onion.
Roll it up like a burrito, seam side down. Generously add some enchilada sauce on top.
Top with 1/8th of the cheese. Place in the microwave until the cheese is melted. Top with black olives and serve. Repeat with the remaining ingredients.

Place a soft taco size flour tortilla on a microwave-safe plate.Smooth 1/8th of the beans down the center. Top with 1/8th of the taco meat mixture. Add some diced onion. Roll it up like a burrito, seam side down on a microwave safe plate. Generously add some enchilada sauce on top. Top with 1/8th of the shredded cheddar cheese. Place in the microwave until the cheese is melted. Top with sliced black olives and serve. Repeat with the remaining enchiritos.

If you don’t have a microwave to heat everything, you can use your oven and stovetop. Heat the beans in a sauce pan on the stove top. To melt the cheese on top, place the enchiritos in an oven safe baking dish and place into a 350F degree preheated oven/toaster oven or even an air fryer until melted.
