These Cheesy Garlic Skillet Rolls are about to become your favorite way to dress up frozen dinner rolls. Soft yeast rolls are stuffed with gooey mozzarella cheese, baked until golden, and brushed with a garlicky Parmesan butter. They’re incredibly easy to make and absolutely irresistible while warm. They’re perfect alongside Spaghetti Casserole, Make Ahead Lasagna, soups, chili, or just about any meal that could use a basket of buttery homemade-tasting rolls. What Kind Of Frozen Rolls To Use? To start with, I use frozen yeast rolls. Any brand of frozen dinner roll dough will do, but you want to use the ones that come loose in a bag. Not the ones in a foil tray. You either need to let them thaw on the counter which will take about 4 hours, or better yet, just stick them in the fridge the night before and they’ll be ready the next day. Type Of Mozzarella Cheese To Use These rolls are super easy to stuff with mozzarella using mozzarella sticks. Cut each stick in 4 pieces and wrap a piece of dough around each one, sealing them the best you can and placing them seam side down in a 12-inch cast iron pan. How To Make Cheesy Garlic Skillet Rolls (More detailed instructions in recipe card below.) Thaw the rolls. Thaw overnight in the refrigerator or for 4 hours on the counter. Stuff with mozzarella. Cut each mozzarella stick in 4 pieces. Wrap a roll around each piece and pinch until the dough is tightly sealed. Let the rolls rise. Arrange them seam side down in a 12-inch cast iron skillet and cover and let rise until doubled. Add more cheese. Tuck additional pieces of mozzarella between the risen rolls. Bake. Bake at 375 degrees for 10 minutes. Add garlic butter. Brush rolls with mixture of melted butter, garlic, garlic salt, and red pepper flakes. Sprinkle with Parmesan cheese and parsley. Finish baking. Bake another 5 to 8 minutes. Recommended Equipment Cast iron is best for these Cheesy Garlic Skillet Rolls  because it retains heat so well, but you could use a 9×13-inch baking dish instead. I love this 12-inch cast iron pan. How To Store and Reheat Store leftover rolls in an airtight container in the refrigerator for up to 3 days. Reheat in a 300 degree oven or air fryer until warm.
