Pimento cheese is a very popular southern recipe made from cheddar cheese, mayonnaise, and diced pimentos. Typically it is served cold with crackers or on a sandwich but when melted, it is wonderfully gooey and creamy. Instead of using mayonnaise, I use cream cheese for this recipe.
