Type Of Sun-Dried Tomatoes To Use
You want to use sun-dried tomatoes packed in oil. I buy slivered sun-dried tomatoes and chop them up a little more. The sun-dried tomatoes add a wonderful savory sweetness to this elegant side dish.
How Long To Roast Green Beans
Green beans should be done in about 15 minutes. They will be tender but still have plenty of texture and just a slight crunch. If you want them even softer you can roast them an additional 5 minutes.
How To Serve Roasted Green Beans with Sun-Dried Tomatoes
These Roasted Green Beans make a great side for a weeknight meal and they go great with just about anything. It also works great as a holiday side.
Recipe Tip
Don’t crowd the green beans on the baking sheet. Use two baking sheets if needed.
Variations
Add bacon for some salty, smoky flavor.
Add a little crumbled feta cheese when you remove the green beans from the oven.
Make it spicy. Add half a teaspoon of crushed red pepper flakes.
Add some sliced kalamata olives when you add the pecans.
Use almonds or walnuts in place of pecans.
Storage
Leftovers will keep 4 to 5 days in an airtight container in the refrigerator.

Ingredients2 pounds fresh green beans trimmed½ cup sun-dried tomatoes in oil chopped3 tablespoons melted butter3 tablespoons olive oil1 teaspoon salt½ teaspoon black pepper½ cup chopped pecans
InstructionsPreheat oven to 425 degrees.Mix all ingredients EXCEPT pecans in a large bowl.Spread out on 2 rimmed baking sheets.Roast for 10 minutes. Stir and add pecans and place back in oven for 3 to 5 minutes.
