How we made bacon back on the farm. Bacon recipe. 5lbs of pork belly 5 tbsp of Tender Quick 1 tbsp of black pepper 2 tbsp of brown sugar Mix together dry ingredients and rub on the pork belly. Cover and refrigerate 5-7 days. After 5-7 days rinse with cold water and place in smoker at 150 degrees for the first half hour. Then turn down heat so temp is below 150 and add hardwood smoke. Internal temp should be 150. I used white ash and apple wood. Smoke for 5-6 hours then cool for several hours before cooking and eating.
