Christmas Smoked Turkey.

Smoking turkey for the holidays. Like I used to back on the farm. Brine turkey or turkey breast for 4-5 days. Inject deepest part of the meat with brine. 1 3/4 gallon water 1 qt of apple cider or juice 2 cups of TenderQuick 1/2-1 cup of brown sugar Black pepper to taste. Mix all ingredients in a food grade bucket with lid. Submerge the turkey in brine and keep refrigerated for 4-5 days Then place in cotton mesh bag to smoke after rinsing and patting dry. Smoke 130-150 degrees for 6 hours with apple and white ash (or hickory) wood. Let cool overnight then cook in an oven bag per instructions.
