Pepper Pantry Cooking: 3 Bean Salad.
Mom’s 3 bean salad. Great for picnics, cookouts or other times when there is no electricity. 1 can of chickpeas 1 can of kidney beans 1 can of green beans 1 small red onion or shallot sliced thinly 1 cup Italian dressing (bought or homemade) 1/2 teaspoon salt 1/2 teaspoon black pepper 1/2 teaspoon of white sugar (optional) Drain the beans well & combine all ingredients. Refrigerate for 1-2 hours before serving. The longer it sets the more flavor it has.
