Bourbon Pecan Blondies

Bourbon Pecan Blondies are wonderfully chewy and buttery and deliciously flavored with bourbon. I love the crunch of pecans that they have. What I Love About These Blondies No Mixer Needed. The batter gets mixed in a mixing bowl with a whisk. Super easy and convenient. The combination of bourbon and pecans is a classic southern flavor combination that really works well. They have a wonderful buttery sweet flavor from lots of brown sugar and toffee bits. They have a chewy texture around the edges and are a little moist and gooey in the middle. Only pantry ingredients are needed, plus a little bourbon from the liquor cabinet! Bourbon Bourbon is by far my favorite liquor to bake and cook with. Some of my favorite recipes using bourbon are Bourbon Beef Stew, Bourbon Balls, Peach Bourbon Tres Leches, and Pecan Chicken in Bourbon Maple Cream Gravy. The bourbon gives the blondies a sweet and smoky flavor. You can use any bourbon you like. I typically use Maker’s Mark. It has a nice smooth flavor. How To Serve Bourbon Pecan Blondies These Bourbon Pecan Blondies are great for a Kentucky Derby Party, a potluck, or dessert. They even go great with a cup of coffee. Serve as is or top with vanilla ice cream, fresh whipped cream, or caramel sauce. Tips For Making Blondies Bake until a wooden toothpick inserted in the center comes out with just a few moist crumbs attached. Be careful not to overbake them or they will be dry. The edges should be golden and the middle just set. Be sure to measure the flour correctly. First fluff it up some in the bag. Then gently scoop it into a dry measuring cup, overfilling it slightly. Then run the back of a knife across the top to level it off and get rid of the excess. Variations Use walnuts in place of pecans. Add half a cup of chocolate chips. How To Store Can be stored at room temperature in an airtight container for 3 to 4 days. You can freeze them for up to 2 months. To freeze, individually wrap them in plastic wrap and then place in a freezer bag. Mom’s Spanish Rice

This Spanish Rice recipe is stuffed with cooked rice, tomato sauce, ground beef, peppers, onions and seasoning. Delicious comfort food! A DELICIOUSLY SIMPLE AND YUMMY SIDE DISH I just love the smell of Spanish Rice when it is cooking. There is just something about the smell of green peppers, onion and ground beef cooking that instantly takes me back to my Mom’s kitchen. Also, let me say, this is absolutely not authentic Spanish Rice. This is just the name it was given when my Mom was in Home Economics class (where she learned this recipe) in the 60’s. But regardless, we love it! FREQUENTLY ASKED QUESTIONS What can I serve with Spanish Rice? It is absolutely delicious with my Layered Taco Bake or Mexican Lasagna. If you have leftovers, try making some Stuffed Peppers.It’s also great with fajitas or Chicken Enchiladas or some Chicken Enchilada Bake. What other seasonings can I add? This is just the basic recipe for Spanish Rice. If you really want to amp up the flavor, try adding a little cumin and garlic powder! You could even sprinkle in a little oregano. Cilantro would also be a lovely addition. What is the difference between Spanish Rice and Mexican Rice? They are very subtle differences. It all has to do with the seasonings. Mexican Rice has cumin in it and it has the flavors similar to red enchilada sauce. Spanish Rice is more tomato based and the flavors are a bit more subdued. Can I use brown rice instead? I haven’t tested it this way personally, but I have seen others use brown rice. I imagine you’ll need a bit more cooking time and probably some more water, tomato sauce, or other cooking liquid when making it. How do I store leftovers? Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat: put a cup or so of Spanish Rice into a microwaveable-safe bowl. Sprinkle with about a tablespoon of water or chicken broth. Cover with paper towel and heat for about 1 minute. Stir to make sure it is evenly warmed through. Microwave for additional 20-30 seconds if necessary.You could reheat leftovers on the stove as well. Can I freeze leftover rice? Yes. Once rice has cooled to room temperature, transfer to an airtight container and freeze for up to 3-6 months. Thaw in the fridge overnight and reheat when ready to enjoy. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) lean ground beef – this works with turkey, chicken, or even plant based meats as well. tomato sauce – in place of tomato sauce, you could use tomato soup. They both work here. prepared white rice– If you are using boil-in-the-bag rice, you will need 2 bags of rice for this recipe. 2 cups of dry rice will make 4 cups prepared rice. This is a great way to use leftover rice also. green pepper– could be swapped out for red, orange, or yellow peppers onion – I think a sweet yellow onion works best but you could even use a shallot to add a touch of garlic flavor. shredded cheddar cheese– optional, but it really is so good! HOW TO MAKE SPANISH RICE In a large pot, add ground beef, green peppers and onion over medium high heat. Add a dash of salt and pepper to mixture. Cook until ground beef is brown and crumbled and veggies are tender. Drain excess grease. Put ground beef mixture back into stock pot. Add prepared rice and can of tomato sauce. Stir until thoroughly combined and heated through. Taste and check for seasonings at this point. I usually feel it needs just a bit more salt & pepper.  Turn off heat and add cheese (if using) until melted. Stir mixture to combine and serve. CRAVING MORE RECIPES? The perfect, light dessert recipe ready in under half an hour! Tender, sweet Baked Peaches with butter, cinnamon, brown sugar, and of course, fresh juicy peaches! A SWEET, FRESH SUMMERTIME DESSERT Summer screams peaches and this is the perfect dessert for those dog days of summer. We love to go peach picking and I make these baked peaches a lot. They’re such a simple dessert that really lets the fresh peaches shine. Plus, it’s not super heavy so it’s the perfect ending to those summertime grilled meals. They’re also great to make when you need a last minute dessert or just want to make the most of this sweet and juicy summertime fruit! FREQUENTLY ASKED QUESTIONS How do I make these on the grill? Yup. In fact, I love Grilled Peaches so much, I made my own Grilled Peaches recipe. How do you know when peaches are ripe? Look for ones that give slightly to gentle pressure and smell sweet when you sniff by the stem end. Ripe peaches will also have a golden-yellow hue with no green tinge around the stem. Should I remove the skin before baking? I don’t suggest removing the skin. While a lot of people like to remove skins from peaches when making Peach Crisp or a Peach Cobbler, with these Baked Peaches, you need the skin on them to help hold them together while baking. Plus, those skins soften as they bake and they get nice and tender. But, if you’re really against the skin, bake them with the skin and then scoop the centers out when you go to eat the peaches. How many servings does this recipe make? If you follow this recipe, using 4 whole peaches, you’ll end up with 8 peach halves. Depending on the serving size you prefer, you could end up with enough for 8 people to each have a half of a peach, or enough for 4 people to enjoy an entire peach (two halves each). What to do with leftover Baked Peaches? I doubt you’ll have leftovers, but if you do, transfer them to an airtight container and keep them in the fridge for up to 3-4 days. Reheat in an air fryer or in the microwave until warmed through. Can you freeze Baked Peaches? Yes, you can freeze the leftovers for up to 2-3 months in a Ziploc freezer safe bag in the freezer. Thaw and enjoy again later by reheating in the oven, toaster oven, microwave or air fryer. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) ripe large peaches – see my FAQ’s above to learn how to pick ripe peaches and why it’s important to leave the skin on when baking. salted butter– You can use unsalted butter as well. brown sugar – you can use a brown sugar substitute like Swerve or Trivia. In addition, for a deeper molasses flavor, try using dark brown sugar. ground cinnamon HOW TO MAKE BAKED PEACHES Preheat oven to 375F. Rinse peaches under cold water to clean then gently dry with paper towels. Slice peaches in half and remove pits. Add peaches, cut side up, into a 9×13-inch baking dish. Add a slice of butter into the center of each peach half.  Sprinkle the brown sugar and cinnamon evenly across the top of the peach halves. Place baking dish in the oven and bake uncovered for 12-15 minutes, until peaches are softened and warmed through.  Serve immediately with a scoop of vanilla ice cream or whipped cream, and drizzle any extra butter sauce on top, enjoy! Get a pot of water to boiling. Once it’s boiling, gently and carefully add the eggs into the pot. Set a timer for 12 minutes. Once the timer goes off, drain the water out of the pot and add the eggs into an ice both (just fill a large bowl with lots of ice and cool water. Let the eggs sit in that ice bath for at least 30 minutes. Once you have them all peeled, set them on a paper towel and gently dry them off. Traditional egg salad is a simple recipe of chopped hard boiled eggs, mayonnaise, sweet pickle relish, salt and pepper. Is an egg sandwich healthy? Well that depends on what you considered healthy! Eggs are loaded with vitamins and minerals are a great source of good protein and healthy fats. If you considered mayonnaise unhealthy (which I don’t), you could use an avocado mayonnaise or a low fat mayonnaise. For the bread you could use a whole wheat, low carb or multi-grain bread. How long does egg salad last in the fridge? In covered container, it will last 3 days in the refrigerator. Chicken Salad

This chicken salad recipe is truly the best chicken salad ever! It’s creamy, perfectly seasoned and I promise everyone will be wanting you to share the recipe! A SUPER FLAVORFUL CHICKEN SALAD RECIPE I’m pretty picky when it comes to chicken salad. Actually I am VERY picky when it comes to chicken salad. I’m particularly picky about the texture and taste of the chicken itself. I prefer a simple chicken salad with seasoned and roasted chicken (this helps ensure that the chicken is the star of the show and no weird texture issues). For me, a good chicken salad has to have a nice balance of being able to taste the chicken along with it being perfectly creamy and not dry or stringy. I think it’s easy to get a little crazy with chicken salad and overdo it with the number of ingredients but sometimes simple really is best! FREQUENTLY ASKED QUESTIONS Can I make the chicken in the air fryer instead of the oven? If you want a faster option, try using your air fryer! My Air Fryer Chicken Breast recipe is a great substitute here. What other things can I add? I will tell you, this recipe is amazing all by itself. It really is all you could want in a chicken salad. But if you want it more of a ‘Napa style’ you could try my Grape Chicken Salad. Other times people will put apple chunks or pineapple chunks. Some people like to swap the mayo out for Greek yogurt or flavored Greek yogurt and add other crunchy textures like poppy seeds, sesame seeds, or coconut flakes. Pecans and almonds are also nice to add additional crunch. Do I have to use bone-in chicken breasts? If you can’t find the bone-in chicken breasts then just use boneless. You could even use chicken thighs. Some people like to use grilled chicken breast as well. Bone-in chicken breasts really help keep the chicken super moist and less of a chance of drying out (plus many times, they end up being cheaper than the boneless.) How should I store leftover Chicken Salad? Keep leftovers refrigerated. Will last 3-4 days in an airtight container in the refrigerator. I do not recommend freezing it. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) whole chicken breasts (bone-in, with skin)– when chopping up the chicken, I left it chunky, but you can cut it up smaller if that’s what you prefer. lemon pepper seasoning – this seasoning goes so well with the chicken. It doesn’t overpower the other flavors but really compliments the flavor of the chicken. mayonnaise – I prefer Hellman’s, JFG or Duke’s. I absolutely do not like Miracle Whip (sorry Miracle Whip lovers!) It is not mayonnaise, it is a dressing but if that is your thing then go for it! sour cream – this chicken salad does not taste “sour” and even if you don’t like sour cream, I still recommend using it. You won’t taste this as a separate ingredient. It helps with the overall creaminess and adds depth of flavor. celery and red onion – if you don’t like celery or onion, just leave them out. I like to dice them up really small. I don’t like to bite into a huge piece of onion or celery. Also, if you like red onion but sometimes find it too pungent, try soaking it in some ice water first. This removes the stronger taste but you’ll still get the essence of the onion in your chicken salad. salt and pepper – After a lot of testing, I think I have the amounts measured out really well here but obviously, if you like more or less, then please make any adjustment you need. HOW TO MAKE THE BEST CHICKEN SALAD Preheat oven to 350f degrees. On a baking sheet, place chicken breasts skin side up. Drizzle them with a bit of olive oil and then sprinkle with lemon pepper seasoning. Cook for about 35-45 minutes until the chicken is cooked thoroughly. Allow chicken to cool before continuing. Once chicken is cool, remove meat. You can save the bones and skin for chicken stock later, if you prefer. Cut the chicken up into bite size chunks. In a medium bowl, mix together the mayonnaise, sour cream, celery, onion and salt & pepper. I usually add about 2 teaspoons of salt and maybe a 1/2 teaspoon of pepper. Add in diced chicken and stir.  Serve on your favorite bread or just a bed of lettuce or eat it all by itself! CRAVING MORE RECIPES?
