Cucumbers are perfect for summer eating because they are so low calorie and hydrating. I make cucumber recipes all summer long. Some of my favorites are Pickled Cucumbers and Onions, Creamy Spicy Cumbers, Creamy Italian Cucumber Salad, and Marinated Cucumber, Tomato, and Onion Salad. How To Make Creamy Cucumber Salsa Chop all ingredients and mix in a large bowl. Refrigerate 30 to 60 minutes to let the flavors blend and get it nice and chilled. Serve. How To Serve This creamy salsa makes a great summer entertaining recipe when served with tortilla chips or pita chips. I especially like it with homemade pita chips. I cut pita bread into wedges, brush with a little melted butter or olive oil and lightly sprinkle with salt. Then I air fry or bake them until crispy.
