by Adam Sharp, Daily Reckoning: Our friend and colleague Jim Rickards was on Steve Bannon’s War Room show Tuesday, and it may be the most important interview Jim has done this year. BBQ Chicken Salad

I make this BBQ Chicken Salad when I need a salad my teen boys will actually devour. With perfectly grilled chicken, beans, corn, and crisp greens, it’s a protein-packed, boldly flavorful meal. This BBQ Chicken Salad is fresh, colorful, and actually fills me up. It’s the kind of salad that hits every craving. In This Article Why This Recipe Stands OutKey Recipe IngredientsSubstitutions And VariationsKey Recipe InstructionsHow To Prep AheadWhat To Serve With BBQ Chicken SaladBBQ Chicken Salad RecipeFrequently Asked QuestionsMore to Cook And Eat View more This post may contain affiliate links, at no additional cost to you. Why This Recipe Stands Out This BBQ Chicken Salad is my go-to when I want something hearty, fresh, and full of flavor with zero fuss. Here’s why I keep it in rotation: It’s a Meal in One Bowl: Grilled chicken, crisp romaine, black beans, corn, tomatoes, cheddar – this salad is loaded and satisfying. It reminds me of everything I love about our BBQ Chicken Pizza but in salad form. Use Your Favorite Sauces: I mix my favorite ranch and honey BBQ sauce. If you love ranch flavors, try our Ranch Roasted Potatoes. Meal Prep Friendly: I prep all the salad ingredients ahead and toss them fresh when it’s time to eat. So Good, I Repurpose It: Leftovers become BBQ Chicken Sandwiches the next day. Leftovers hold up well, like they do in our BBQ Ribs – sweet, tangy, and totally satisfying. Key Recipe Ingredients Grilled Chicken – Juicy, chopped grilled chicken adds satisfying protein and makes the salad feel like a complete, hearty meal. Romaine Lettuce – Crisp romaine serves as the fresh, crunchy base that holds up well under all the toppings and dressing. Black Beans & Corn – These pantry staples add texture, fiber, and a slightly sweet, earthy flavor that complements the other ingredients. Cheddar Cheese – Shredded cheddar offers creamy sharpness and helps balance the tangy, smoky flavors in the salad. Ranch Dressing & BBQ Sauce – A drizzle of ranch paired with sweet BBQ sauce gives the salad its signature flavor—creamy, tangy, and smoky all in one bite. Substitutions And Variations Here are some of our favorite substitutions and variations: Add Crunch: Toss in some crushed tortilla chips, crispy fried onions, or roasted chickpeas for added crunch just before serving. Onion Adjustments: Red onions give a punch, but you can mellow them by soaking in cold water first. Corn Variations: Canned corn is easy, but grilled or charred corn adds a smoky flavor that pairs perfectly with the BBQ vibe. Frozen corn (thawed) also works in a pinch. Key Recipe Instructions Dry chicken, pound to even thickness, and marinate in BBQ sauce. Grill chicken 4 minutes per side. Outdoor grill or indoor cast iron grill both work. Combine all salad ingredients and toss with plenty of BBQ sauce and ranch dressing. For full list of ingredients and instructions, see recipe card below. How To Prep Ahead Take a look at our best prep-ahead strategies for this recipe: Prep the Chicken Ahead: Grill and chop the chicken up to 2 days in advance. Store it in an airtight container in the fridge so it’s ready to toss into the salad when you are. Chop & Store the Veggies: You can chop the romaine, tomatoes, onion, and drain the beans and corn ahead of time. Store each ingredient separately or layer them (without dressing) in a large container or mason jars for grab-and-go salads. I throw this BBQ Chicken Salad together when I want something easy but hearty. What To Serve With BBQ Chicken Salad Other Tex-Mex Dishes We love pairing this BBQ Chicken Salad with a scoop of Best Easy Mexican Rice. It’s fluffy, flavorful, and ties in beautifully with the salad’s black beans, corn, and BBQ flavors. It also goes great with the 4-Ingredient Salsa Verde Enchilada Bake, especially if you’re turning the salad into a full Tex-Mex dinner spread. Hearty Add-Ons If we’re making this salad the centerpiece of a weeknight dinner, we like to round it out with something hearty like the 30-Minute Mexican Chicken and Quinoa Stew. It’s protein-packed and perfect for cooler nights. It also goes great with one of the 15 Easy Potato Recipes if you want to add something warm and comforting to the table. Summer Drinks We love sipping a 4-Ingredient Mango Margarita with this BBQ Chicken Salad. It’s fruity, tropical, and brings out the sweetness in the honey BBQ sauce. It also goes beautifully with 5-Minute Strawberry Margaritas or classic 3-Ingredient Lemonade Margaritas when you’re keeping things simple and refreshing. Print BBQ Chicken Salad This BBQ Chicken Salad is easy, delicious, and full of goodness. Packed with grilled chicken, tomatoes, corn, black beans, cheese, and greens; topped with your favorite honey BBQ sauce. You can't go wrong with this one! Course SaladCuisine AmericanDiet Gluten FreeMethod Grill, Mixing Prep Time 10 minutes minutesTotal Time 10 minutes minutes Servings 4 Calories 387kcal Author Amy Dong Ingredients2 chicken breasts boneless and skinless1 TB olive oilkosher salt freshly ground black pepper1 head fresh romaine lettuce chopped½ cup grape tomatoes sliced in half½ cup canned corn kernels drained½ cup canned black beans drained well (rinse if desired)¼ cup red onion diced⅔ cup cheddar cheese shredded¼ cup ranch dressing1 ¼ cup honey BBQ sauce divided Optional Toppingstortilla strips or croutons InstructionsUse paper towels to pat dry chicken well. Place a sheet of cling wrap over the chicken and use a meat tenderizer to pound chicken to an even 1/2" thickness throughout. Sprinkle both sides of chicken pieces with a light, even layer of kosher salt and black pepper. Pour 1 cup BBQ sauce over the chicken, ensuring pieces are fully submerged in sauce. Marinate for 10 minutes. Grease outdoor grill or cast iron pan and heat until very hot and smoking. Cook chicken about 4 minutes per side, or just until no longer pink in center – do not overcook. Immediately remove from heat and let chicken rest on cutting board for 5 minutes before slicing. In a large bowl, add lettuce, tomatoes, corn, beans, onions, and cheese. Add sliced chicken. Drizzle with ranch dressing and Drizzle ranch dressing and remaining 1/4 cup BBQ sauce over the salad and gently toss to combine well.Serve immediately. Serve immediately. Notes Grilling the chicken ahead of time and storing it in the fridge makes this salad quick to throw together on busy weeknights or for easy lunches. To keep things fresh, prep all your ingredients ahead of time but wait to dress the salad until just before serving. This keeps the lettuce crisp and prevents sogginess. Turn leftovers into an entirely new meal by wrapping them in a large tortilla for a BBQ Ranch Chicken wrap – it’s just as good the second time around. Yes! Rotisserie chicken or any leftover grilled chicken works perfectly here. Just chop it up and toss it in to save time. What kind of lettuce is best for chopped salads? Romaine is ideal for its crisp texture and sturdy leaves. It holds up well to hearty toppings and dressing without getting soggy too quickly. Do I need to rinse the canned black beans and corn? The corn can be drained straight from the can, but rinsing the black beans helps remove excess salt and gives a fresher flavor. Totally optional, though. What else can I do with this salad mix? It makes an awesome sandwich or wrap filling! Toss everything together and stuff it into a tortilla or toasted bun for a tasty BBQ ranch chicken sandwich. How long does the BBQ Chicken Salad recipe keep? When stored without dressing, it’ll keep well in the fridge for up to 3 days. Once dressed, it’s best eaten right away to keep the lettuce crisp. Funfetti Cookies

These Funfetti Cookies are what I make when I want festive, vibrant, happy cookies. They’re buttery-delicious. Change up the colors to suit the occasion all year round. These Funfetti Cookies are my kind of happy. Soft, sprinkle-filled, and easy to prep ahead – they’re joy in cookie form. In This Article Why This Recipe Works So WellKey Recipe IngredientsSubstitutions And VariationsStep-By-Step Recipe InstructionsHow To Prep AheadFrequentlAsked QuestionsFunfetti Cookies RecipeMore to BAke And Eat View more This post may contain affiliate links, at no additional cost to you. Why This Recipe Works So Well These Funfetti Cookies are buttery, soft, and full of cheerful sprinkle energy. They’re my go-to when I want something fun and festive without much fuss. You’ll love this about them: Soft, Buttery, and Melt-in-Your-Mouth: These cookies are rich, tender, and just the right amount of sweet. They remind me of the texture in our Soft Lemon Cookies. Easy to Make Ahead: The dough chills beautifully, so I’ll often prep it in advance and bake anytime. I also prep Birds Nest Cookies during springtime. Brings Instant Joy to Any Occasion: Whether it’s birthdays, holidays, or just because – it’s hard not to smile when these hit the table. Same reason I adore making Funfetti Pancakes for breakfast celebrations. Kid-Approved and Party-Perfect: The sprinkles speak for themselves. These cookies are always a hit with kids (and grown-ups), just like our colorful Monster Cookie Bars. Key Recipe Ingredients All-Purpose Flour – Flour provides the structure and soft crumb that make these cookies thick and tender. Salted Butter – Cold, cubed butter gives these cookies their rich, melt-in-your-mouth texture and buttery flavor. Granulated Sugar – Adds just the right amount of sweetness and helps create that soft, fluffy texture when creamed with butter. Vanilla & Almond Extracts – This flavor duo adds depth and gives these cookies that signature bakery-style taste with a hint of almond. Colorful Sprinkles – For the classic funfetti touch, sprinkles make these cookies festive, cheerful, and perfect for celebrations big or small Substitutions And Variations Here are some of our favorite substitutions and variations: Flour Swap: For a softer texture, try replacing ½ cup with cake flour. Avoid using bread flour – it will make the cookies too dense. Sugar Variation: Granulated sugar gives these cookies their classic structure, but for a subtle caramel note, you can swap out ¼ cup of the sugar for light brown sugar. Color Themes: Customize the sprinkle mix for any occasion. You can use pastels for Easter, red and green for Christmas, orange and black for Halloween, or school colors for grad parties. Step-By-Step Recipe Instructions Preheat oven to 350°F and line baking sheets. In a stand mixer, beat sugar and cold butter until light and fluffy, about 2 minutes. In a bowl, whisk together flour and baking powder. Set aside. Mix in egg, vanilla, and almond extract until fully combined. On low speed, gradually add the flour mixture in two batches, mixing just until combined. Fold in sprinkles by hand. Use hands to bring crumbly dough together into a smooth ball. Wrap tightly and chill for at least 30 minutes. Roll dough into heaping 1 TB balls and slightly flatten into thick discs. Add extra sprinkles on top if desired. Bake for 9-10 minutes until puffy and golden. Cool completely and store in an airtight container. For full list of ingredients and instructions, see recipe card below. How To Prep Ahead Take a look at our best prep-ahead strategies for this recipe: Make the Dough Ahead: You can prepare the cookie dough up to 3 days in advance. Wrap it tightly in plastic wrap and keep it chilled in the fridge until you’re ready to bake. The chill time also helps the cookies hold their shape and bake up soft and puffy. Freeze for Later: Want to bake later? Shape the dough into balls, flatten slightly, and freeze on a baking sheet. Once solid, transfer to a freezer-safe bag or container. Bake straight from frozen – just add an extra minute or two to the bake time. Bake and Store: Baked cookies keep beautifully in an airtight container at room temperature for up to 5 days. Perfect for party prep or a cheerful anytime treat! These Funfetti Cookies are always a hit, no matter the occasion. FrequentlAsked Questions Why is the dough a bit crumbly? This is totally normal. Once you mix in the sprinkles, use your hands to bring the dough together into a smooth ball – it’ll hold perfectly once chilled and baked. Can I use unsalted butter instead of salted? You can! Just add ½ teaspoon of salt to the dry ingredients to balance the flavors if using unsalted butter. What kind of sprinkles should I use? Use colorful jimmies (the long, soft kind). Avoid nonpareils (tiny round balls), as they tend to bleed into the dough and can create streaks of color. Can I double the recipe? Yes! This recipe doubles beautifully. Great for parties, birthdays, or whenever you want to bake a little extra happiness. How long do the funfetti cookies keep? Store cooled cookies in an airtight container at room temperature for up to 5 days. For longer storage, you can freeze baked cookies for up to 1 month. Print Funfetti Cookies These Funfetti Cookies are easy to make and melt-in-your-mouth delicious! They're a great way to bring a little color and cheer into any occasion. Course DessertCuisine AmericanDiet VegetarianMethod Bake Prep Time 10 minutes minutesCook Time 9 minutes minutesChill time 30 minutes minutesTotal Time 49 minutes minutes Servings 24 cookies Calories 166kcal Author Amy Dong Ingredients3 cups unbleached all-purpose flour2 tsp baking powder1 ¼ cup granulated sugar1 cup salted butter 2 sticks, cold & cut into chunks1 large egg1 tsp pure vanilla extract1 tsp pure almond extract3 TB colorful sprinkles plus extra for topping InstructionsPreheat oven to 350, with rack on lower middle position. Line baking sheets with parchment paper. In a bowl, whisk together the flour and baking powder. Set aside. In the bowl of a stand mixer fitted with paddle attachment, blend the sugar and butter until light and fluffy, about 2 min, scraping down sides as needed. Add the egg and extracts and mix to fully incorporate.Switch to low speed. Gradually add the flour mixture in 2 batches, beating just until combined, stopping to scrape down the sides and bottom of bowl as needed. Do not over beat.Once dough ball comes together, add desired amount of sprinkles into the dough, and use your hands to work dough into a smooth ball. Cover tightly with cling wrap and chill at least 30 minutes or until ready to use.Form dough into heaping 1 1/2" TB balls. Press down to flatten each ball a bit, into a thick disc, about 1/2" tall. Add more sprinkles to the tops of each cookie, if desiredbake 9-11 minutes or until puffy and set. Allow cookies to cool completely before serving. Notes When mixing in the flour, be careful not to over-beat. Make sure to stop as soon as the dough starts to come together to keep the cookies tender, not tough. Jimmies are the best sprinkle choice here; they hold their shape and don’t bleed into the dough like nonpareils often do. If the dough seems crumbly after mixing, use your hands to press and knead it into a smooth ball before chilling – it’ll come together easily. To keep the cookies looking festive, press a few extra sprinkles on top of each dough ball right before baking for that signature funfetti look. For softer cookies, bake less time. For crispier cookies, bake the full 11 minutes.  This recipe is part of our Cookie Recipes Collection.   If you enjoyed this recipe, please come back and give it a rating. Nearly A Dozen “Armed & Dangerous” Inmates Escape Jail

According to reports, 10 “armed and dangerous” inmates escaped a New Orleans jail Friday morning. The Orleans Parish Sheriff’s Office said it’s possible the inmates had inside help. “Two inmates have been captured, and eight remain at large,” CBS News noted. “A law enforcement source shared a photo of a hole in the wall of the Orleans jail where 11 inmates reportedly escaped,” FOX 8 New Orleans stated. Scribbled around the hole are messages including “To Easy LOL,” “Catch us when you can,” “We innocent,” “Most Hated,” and expletives. https://t.co/BYYesWprql pic.twitter.com/vtQSyTDBUT — FOX 8 New Orleans (@FOX8NOLA) May 16, 2025 CBS News reports: Earlier, the sheriff’s office had said 11 inmates had escaped the jail but updated the count later on Friday. Keith Lewis was incorrectly identified as an escapee, Sheriff Susan Hutson said during a news conference. “There’s no way for anyone to get out of this facility without help from the outside,” Hutson said. The inmates were discovered missing during a routine head count conducted at 8:30 a.m. local time at the Orleans Parish Jail, according to the sheriff’s office. They are believed to have escaped sometime just after midnight. The sheriff said that around 12:23 a.m., the inmates yanked the sliding jail cell door off the track and at 1:01 a.m., they exited the jail after breaching a wall behind a toilet. The toilet and bolts were removed using toiletry items, the sheriff said, but didn’t specify what the items were. The inmates then scaled down a wall and ran across the interstate. The Orleans County Sheriff’s Office on Friday night released security video of the extraordinary escape, which shows the inmates sprinting out of the prison and then traversing the freeway. “After escaping through the hole, the inmates used blankets to scale over a barbed wire fence. They then had a clear path to railroad tracks and then the freeway,” Collin Rugg wrote. ANYONE HELPING THESE ESCAPEES WILL BE ARRESTED & CHARGED AS AN ACCOMPLICE. pic.twitter.com/xxSiwd4gi0 — New Orleans Police Department (@NOPDNews) May 16, 2025 Per NOLA.com: The cameras that captured the escape are several of about 900 at the facility, authorities said. On the night of the escape, a corrections monitoring technician, a civilian, was monitoring Pod 1D. Civilians are assigned to those roles when deputies aren’t available, officials said. When the technician stepped away to eat, the inmates escaped by slipping through the damaged pipe-chase area at the rear of the cell. More than 200 federal, state and local law enforcement personnel, including the New Orleans Police Department, U.S. Marshals, ATF, Homeland Security and the FBI, are assisting in the hunt for 10 escaped inmates, at least five of whom have murder or attempted murder convictions or pending charges, officials said.
