Virginia Peanut Pie

This creamy‚ crunchy Virginia Peanut Pie is perfect for any peanut lover. With a flaky crust‚ this scrumptious dessert is like a pecan pie but with peanuts! A SOUTHERN VIRGINIA CLASSIC PIE This flavorful Virginia Peanut Pie is a classic that I grew up eating in Southern Virginia. If you’ve ever traveled in the southern half of Virginia‚ you will know it’s a famous dessert served at Virginia Diner Restaurant in Wakeville‚ VA. In fact‚ this recipe is so fantastic‚ I’ve written it so it makes two pies. I like to enjoy one with my family and give the other to friends or other family members. Or just save the other one to use later in the freezer. A win win! FREQUENTLY ASKED QUESTIONS (FAQ’S):  Where did this Peanut Pie come from? Like I mentioned earlier‚ the Virginia Diner is known for this pie. You might be familiar with Virginia Diner peanuts that are sold all over America. Southern Virginia is known for everything peanuts. Fun fact‚ Virginia was the first colony in the U.S. to plant peanuts. Previously‚ they were a South American crop‚ but even today‚ Virginia is still one of the largest producers of peanuts. In fact‚ Suffolk‚ Virginia dubs itself as the peanut capital of the world and is the home to Mr Peanut himself! So‚ it’s only natural that the best Peanut Pie comes from the home of the best peanuts around! Can I make a deep dish pie instead? Sure‚ if you don’t want two Virginia Peanut Pies‚ the amount of filling you get from this should fit into a deep dish pie crust (with a little leftover) but baking times will vary and I haven’t tested in a deep dish so you’d have to play that by ear. What else can I add to this pie? You can add other nuts or even some cinnamon for a fun twist to the pie filling. How should this be served? You can serve this Peanut Pie at room temperature‚ cold‚ or warmed slightly in the microwave‚ either way this is a super delicious‚ sticky pie! I would say serve it however you enjoy serving pecan pie. What are the best peanuts to use in this pie recipe? I think this pie is fantastic with the Virginia Diner brand of Peanuts. They are absolutely delicious‚ but they can be pretty expensive‚ so we often make it with good ol’ Planters Peanuts since they’re a brand that can be found pretty much everywhere and tend to be a bit cheaper.   What other toppings can I try? Honestly‚ I personally enjoy it without any toppings but my family loves it with a scoop of ice cream. You could even put a little whipped cream on top or a drizzle of caramel sauce! How to store leftover Peanut Pie? This easy Peanut Pie should be kept in the fridge for up to 4 days and it should be covered to keep fresh. It can be kept longer by freezing for up to 3 months. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) salted dry roasted peanuts – see my FAQ’s above for more information on the types of peanuts you can use. light brown sugar– if you really love a deep molasses flavor‚ try using dark brown sugar with the dark corn syrup. It will obviously make the pie much darker but does add a bit more flavor. large eggs – if you have time‚ allow the eggs to come to room temperature. This just helps them mix into the batter more evenly. all-purpose flour – this helps to thicken up the filling a bit. Do not substitute for cornstarch. dark corn syrup– or light corn syrup can be used. I think the dark brown corn syrup adds a deeper molasses flavor that I love but light corn syrup works just fine.  vanilla extract unsalted butter – if all you have is salted butter‚ that is just fine. There isn’t much salt in salted butter to really make much of a difference in taste. unbaked pie shells – just regular – not deep dish (or make homemade pie crusts) HOW TO MAKE VIRGINIA PEANUT PIE Preheat the oven to 350°F. Place the peanuts into a zippered plastic bag and use something like a rolling pin to crush the peanuts. You want some larger and smaller pieces‚ set them aside. In a large bowl‚ whisk together the brown sugar‚ eggs‚ flour‚ corn syrup‚ and vanilla until smooth. Add the peanuts and stir them in. Add the melted butter and stir until smooth. Divide the filling between the two pie shells that have been placed on a sheet tray‚ this will make handling the pies easier. Bake for 45-60 minutes until just the center of the pies are slightly jiggly. Cover with foil about 30 minutes into the bake time to prevent over-browning. Allow to cool for at least 4 hours at room temperature before slicing and serving. Thousands of senior citizens are flying to Mexico and walking back over the US border as illegal aliens in order to take advantage of the much better benefits package that illegal aliens receive. “I heard about the sweet deal those migrants were getting with housing covered‚ gift cards‚ and food‚ and compared it to what I was getting in Social Security after having worked my ass off the last 50 years‚ and it was a much better deal‚ so I decided to become an illegal alien‚” said John Baptist‚ who now goes by the name Juan Valdez. Several thousands of seniors have done the same thing‚ taking advantage of generous sociopaths in government. “We paid our fair share and we shouldn’t be getting the short end of the stick‚” one new illegal alien named Marsha said. One estimate put the percentage of Americans becoming illegal aliens to get better benefits is upwards of 5% but experts think that number will rise as it’s clear there’s absolutely no accountability for the redistribution. Newly-impeached DHS Secretary Alajandro Mayorkas made it clear that the funds are to be spent on actual illegal aliens‚ not those pretending to be illegal aliens. “Pretending to be an illegal alien is a serious crime that will be met with the full extent of the law!” Mayorkas said. They say laughter and math are pretty universal across borders – but what about music? A catchy beat can get feet tapping all over the world. Just the right sounds can get everyone’s blood pumping with all of life’s heartbreaking‚ wonderful possibilities. If we were to get everyone to sit down and watch just one live performance‚ it would have to be Marvin Gaye singing “What’s Going On” in 1972. For listening on-demand‚ “What’s Going On” came out just the year before on the studio album of the same name‚ which itself is a treasure trove of solid tracks. It helps that it’s a concept album‚ basically meaning all the songs work together to tell a bigger whole story. That’s great‚ but to watch Gaye sing it live‚ viewers get one of those rare chances to say that elusive phrase‚ “Live sounds better than in the studio!” while getting a performance that could get everyone believing in a brighter future. Marvin Gaye touched on timeless topics with “What’s Going On” Looking at the original song and the album whose name it inspired‚ “What’s Going On” was steeped in history. The album tells the story of a Vietnam War veteran who‚ after all those horrors overseas‚ comes home to conflict‚ fear‚ and hardship right in his own home country. Trying to understand the disproportionate violence‚ Benson asked‚ “What is happening here?” His questions continued and so did the inspiration. He worked with Benson after his usual group turned down the tune and called it a “protest song.” To this‚ Bensonc ountered‚ “No‚ man‚ it’s a love song.” If that doesn’t sum it up beautifully‚ nothing does – just the love song performed live in just the way by Gaye we all need to pause‚ listen to‚ and soak in. On top of that‚ Benson put his own unmistakable flair on “What’s Going On” that turned it from a pure song into what Benson called a “story.” But still‚ he sings it live at his best. But there‚ we get to finally say an artist sounds just as good live as he does recorded. In fact‚ some listeners avidly believe “the live is better than the recording‚” noting that the “vocals &; instruments are crisp &; the way he sung it was astounding.” Yet another lauded this particular rendition as the “VERY BEST version of the song.” MARVIN GAYE‚ early 1980s / Everett Collection Others‚ thanks to Gaye’s vocals‚ felt the meaning behind his desire to spread positivity. “This is the answer‚” one listener said. “Don’t listen to the media. But this rewind promises a magical game of catch-up that will address everyone’s wish to hear the latest from this memorable sitcom and a cast that includes Barbara Eden and Larry Hagman.   During its ascent to fame‚ I Dream of Jeannie often drew comparisons to another show featuring a magical blonde who confounds her mortal friends: Bewitched. For all the parallels‚ though‚ it sported its own unique cast that brought their talents into making Jeannie a household name. Catch up with them here. Barbara Eden (Jeannie) Barbara Eden led the cast of I Dream of Jeannie / Everett Collection The Lady in the Bottle herself‚ Jeannie filled her days trapped in that bottle doing a whole lot of nothing for a whole lot of years — 2‚000 to be exact. All of that changes when a marooned pilot frees her after a crash-landing on his return from outer space. When human and genie lock eyes‚ it’s love at first sight — for her‚ at least. One quick stowaway mission later‚ Jeannie becomes an inseparable part of Captain Nelson’s life with the sole goal of fulfilling her master’s wishes. Through the struggles interrupting her childhood‚ her mother sang to Eden and her sister to lift their spirits. This paved the way for Eden’s own interest in singing‚ and her first public performance on the Chicago news. Eden’s first break was using her charm on Desi Arnaz and making Lucy rather jealous on a 1957 episode of I Love Lucy. That very same year she booked her own series‚ How to Marry a Millionaire. HOW TO MARRY A MILLIONAIRE‚ from left: Lori Nelson‚ Barbara Eden‚ Merry Anders‚ 1957-59 (Everett Collection) With this success‚ Eden could move to motion pictures‚ joining 20th Century Fox. This gave her the chance to star alongside the King himself in 1960’s Flaming Star. When 1964 came around‚ it brought the ascent of Bewitched‚ so Sidney Sheldon recruited Barbara Eden for the cast of I Dream of Jeannie. Jeannie came and went between 1965 and 1970‚ but Eden kept herself busy — even with her former Jeannie co-star Larry Hagman — for the 1971 made for TV-horror‚ A Howling in the Woods. Then‚ in ’78‚ Eden went on to star in Harper Valley PTA‚ based on the popular country song‚ which was successful enough that it spawned the 1981 to 1982 television series. When things seemed to slow down‚ she would reprise the role of Jeannie in a TV movie. This did not feature all of the I Dream of Jeannie cast because Hagman was busy terrorizing Southfork as oil baron J.R. Ewing Dallas. This movie didn’t get a great reception‚ but it was successful enough that it spawned a sequel. But fans still knew her for that famous arm pose — and for her remarkable singing voice she showed off alongside Bob Hope and Jerry Lewis‚ and in numerous live performances. Not everything was magical for Eden‚ though‚ as she suffered a breakdown following the death of her only son Michael via drug overdose. Through a lot of hard-earned poise‚ she’s endured. Her biggest recent credit came from 2019’s My Adventures with Santa‚ where she played Mrs. Claus. Still as magical as ever! Larry Hagman (Tony Nelson) Larry Hagman before and during I Dream of Jeannie / Everett Collection Space‚ the final frontier — wait‚ that’s Star Trek. But Captain Tony Nelson probably thought his biggest adventures would happen in outer space‚ not crash-landing on a deserted island. His crash-landing put him right in a world of wonder and magic‚ though he and most men didn’t really complain with Jeannie as the genie. His own mother was Mary Martin‚ who won a Tony Award for her Peter Pan in 1954. His own career began in 1957 when he appeared three times on Lloyd Bridges hit show‚ Sea Hunt. 1964 proved a very good year for Hagman when he acted alongside a young Jack Nicholson in Ensign Pulver‚ and then with Henry Fonda in Fail-Safe. Just a year later‚ he struck gold and his career rocketed — literally — by joining the cast of I Dream of Jeannie. No amount of genie magic could make things run completely smoothly‚ sadly‚ since Hangman wrestled with alcoholism through much of the show. After a while‚ he couldn’t turn on that chipper personality and Eden had to fight to help him keep his spot among the cast. For others‚ he’s the despicable and hateful JR Ewing from Dallas. Thanks to him‚ viewers around the world got one of the most popular cliffhangers in TV history. Absolutely everyone was asking: who shot JR Ewing? Even world leaders and royalty couldn’t wait to find out. And for those who ever wanted to hear an astronaut-turned-oil-tycoon sing‚ look no further than Hagman’s very own single‚ Ballad of a Good Luck Charm. Hagman himself said‚ JR could get away with bribery‚ blackmail‚ and adultery. But he couldn’t get past cancer‚ and in 2011‚ he died at the age of 81. Rest in peace‚ Captain. Bill Daily (Roger Healey) Daily joined Pat Finley on The Bob Newhart Show after leaving the cast of I Dream of Jeannie / Everett Collection With friends like these‚ who needs enemies? Captain Roger Healey likely never expected best friendship with Nelson to result in dangerous shenanigans with an actual genie. But here we are — and here he is‚ transported to the arctic‚ or atop a missile‚ and always with an echoing “Jeanie!” yelled passed his lips. As the resident womanizer‚ his character didn’t undergo much development‚ but he was an indisputable riot with his comedic timing and wit. THE BOB NEWHART SHOW‚ Bill Daily‚ Bob Newhart‚ Marcia Wallace‚ Suzanne Pleshette‚ Peter Bonerz‚ 1972-1978 (Everett Collection) Things started very seriously for actor Bill Daily after he joined the Korean War‚ first in the artillery‚ then with a proper place in the entertainment unit. Even after returning stateside‚ Daily continued with standup comedy. While preparing for a Chicago-area Emmy Award telecast‚ he asked a young Bob Newhart to come up with a routine with him. (Everett Collection) Eventually‚ the magic ran out for the I Dream of Jeannie cast‚ but Daily didn’t stay wanting for long. His friendship with Bob Newhart became vital as he became Howard Borden on The Bob Newhart Show. This would become Daily’s legacy. Though‚ his most notable post-Newhart role was another supporting character‚ that of Larry the psychiatrist on the cult favorite ALF. After a very long and eventful life‚ Daily passed away in 2018 at the age of 91. It was a sad day never hearing another‚ “Hi Bob.” Hayden Rorke (Dr. Bellows) Hayden Rorke before and during his time with the cast of I Dream of Jeannie / Everett Collection Nelson and Jeannie both had to watch their backs around Dr. Bellows‚ NASA’s relentless psychiatrist who was dead set on proving Tony crazy‚ lying‚ or both. Never was there a funnier doctor in television history than the hilariously prissy Bellows‚ managing to make acute skepticism and dread amusing. Dr. Bellows ended up his biggest role / Everett Collection For Hayden Rorke’s part‚ during World War II he enlisted in the Army‚ where he made his film debut in the musical This Is the Army starring not-yet-president Ronald Reagan‚ for which he was uncredited as the stage manager and as a fellow soldier. Such a small part meant his name didn’t get any real spotlight‚ though. Playing the big baddie Arne Mason in The Lone Ranger finally got Rorke some fame. Then‚ in 1957‚ Rorke played Steve in a nine-episode arc on Mr. Adams and Eve. Joining the I Dream of Jeannie cast proved the most lucrative for his career and name recognition. Indeed‚ 1965’s Dr. Bellows that made Rorke recognizable to the world‚ and he had no qualms leaning into that‚ so when the reunion movie launched‚ he put the lab coat back on with gusto. He and his boyfriend would also have the Jeannie cast over for parties. Overall‚ he acted like a prince to everyone he met. So it’s sad to learn this kind soul was among the first in the Jeannie cast to die in 1987. He was 76 years old.
