Prepare a 9×9-inch baking dish with parchment paper and cooking spray. Set aside. Add the graham cracker crumbs, sugar, and melted butter to a small mixing bowl. Mix until combined. Add to the bottom of the prepared baking dish and press firmly into an even layer. Bake for 10 minutes.  In a large mixing bowl with a hand mixer, beat the cream cheese and sugar until smooth and creamy. Add the greek yogurt and vanilla. Pour the cheesecake batter over the cooled crust and spread into an even layer.  In a large mixing bowl, combine the chopped strawberries, sugar, and cornstarch. Toss until the strawberries are completely coated.
