A buttery crust and a slightly tangy lime filling make up these beautiful Lime Bars. The perfect summer dessert! A CITRUS DESSERT BAR Just like your favorite Lemon Bars, these Lime Bars have the perfect balance of tanginess, sweet, and a hint of tartness. They’re refreshing to enjoy, especially after a hot summer day! They don’t require all that much hard work to whip up and you can enjoy other summer activities like enjoying some pool time while you wait on these to chill in the fridge. These lime bars are a bit more mellow than your traditional key lime bars which is what I love about them! FREQUENTLY ASKED QUESTIONS:  What’s the difference between regular limes and Key Limes? Key limes are smaller and more fragrant than regular limes. They have a higher acidity and are more tart. Regular limes, on the other hand, are larger, less acidic and have a slightly less tart flavor. What kind of limes do I need to use for Lime Bars? I used regular limes but key limes can be substituted in this recipe. What other crust options can I try? Instead of this buttery crust, try a graham cracker crumb crust for the bottom layer. How do I make sure the bars cut cleanly? Wiping the blade of your knife in between cuts is helpful to keep your bars nice and clean with smooth edges. Additionally, you can run the blade of the knife under warm water and drying it off before using it to help get smooth cut lines. How to store leftover Lime Bars? Leftover bars should be stored in an airtight container and can be kept for up to a week. You can also freeze these bars for up to 3 months. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) all-purpose flour powdered sugar salt  unsalted butter granulated sugar  lime zest– you’ll need this from about three to four limes fresh lime juice– using fresh lime juice is a crucial part of this recipe. The bottled stuff often tastes very fake because it’s highly acidic. large eggs green food coloring– If you don’t want the green Lime Bars, these will be just fine without the food coloring- just not the vibrant green color you see here. HOW TO MAKE LIME BARS Preheat the oven to 350F degrees. Line a 9×13-inch baking pan with parchment paper or spray with nonstick baking spray. Set aside. In a bowl (or the bowl of a stand mixer), sift together 2 1/2 cups flour, powdered sugar, and salt.  Then add the melted butter and mix until combined. Put the crust dough into the lined pan and press into a flat thin layer with the bottom of a measuring cup. Bake for about 20 minutes, until a light golden color around the edges. In a food processor or stand mixer, add in the sugar and the lime zest. Mix until the zest is fully incorporated. Add remaining half cup of flour to the sugar mixture and pulse again.  Add lime juice, eggs, and green food coloring (optional), and mix until completely combined. Pour the filling over the crust and place in oven. Bake for about 30-40 minutes, turning the  pan after 15 minutes. Check for doneness by wiggling the pan. If it doesn’t jiggle in the  middle, it’s done. Do not overbake.  Remove from the oven and allow to cool for about an hour before chilling in the refrigerator. Then chill for at least two hours. When ready, dust heavily with powdered sugar and then cut into 16 bars. Mel Brooks was honored with a well-deserved career achievement award at the recent 84th Annual Peabody Awards event in Los Angeles, which he attended wearing a sharp double-breasted suit over a cream shirt and gray tie. He looked content as he posed for red-carpet photos at Beverly Wilshire Hotel. The comedy icon showed off his newest prize while taking pictures with his son, Max, and his teenage grandson Henry. He also posed with Billy Crystal, who described Mel’s comedy as “fearless genius and boundary-pushing,” while presenting him with the award. Country Music Legend Kris Kristofferson Reflects On Retirement

Updated 6/13/2024 Kris Kristofferson has had a very successful career as an actor, songwriter and country singer and is now enjoying his downtime. Much to the shock of his fans, he is indeed retired and lives in Maui, Hawaii with wife Lisa Meyers, where he’s lived for many years and raised five children. At 87 years old, he is still very involved in the community and reportedly gives back to the schools there. His manager revealed that his health is good and he spends all of his time with his family. This is great news considering it was once revealed that he was being treated for dementia, although he ultimately discovered that it was actually Lyme disease. By all reports, even though he still suffers from memory loss, overall he is doing quite well these days. Back in 2013, he spoke to media about his fading memory, noting, “My memory is so [crappy] now. I found, and we didn’t know it at the time, that all the concussions you get in boxing and football start catching up with you by the time you get to be as old as I am. Memory’s going fast. I guess the good thing about it is that it doesn’t bother me. I just remember what I have to. Fortunately, my wife is about 20 years younger than me; we’ve been married 30 years and she can take care of me.” The Draw of Hawaii Long before he retired there, Hawaii felt like home to Kris. “I’ve been coming out here since I was a kid,” he shared with the Austin Chronicle. “My old man worked for Pan American; I bought this place around 1970. I live on the small, unpopulated side of the island. Oddly, this side reminds me of where I grew up down in Brownsville, Texas. It’s got the same grapefruit trees. It’s real vegetated. Everybody thinks I’m crazy saying that, but it’s kind of like the Rio Grande Valley, where the biggest crop was grapefruit before anybody had them and it was always green.” “People treat each other differently [here],” he added to thefader.com. “There’s an honesty about the friendships and behavior. I’d noticed it first when i was about 17, when I went to work for Hawaiian Dredging in the summer out on Wake Island. And the people — there’s a whole different sort of generosity and honesty about the people. I remember the first day I got there, they were driving us to the dinner — everybody in the same place, because Wake Island is very small, a little atoll — and the guy driving, he was drinking a beer, and he asked me if I wanted one.” Kris accepted it, and it was at that moment that he realized, humorously, that you shouldn’t say you want something or admire it, because before you know it, it’s being handed to you. “A guy did it to me with a spear gun out there,” he said. “There’s a real generosity that was almost an innocence.” Kris Kristofferson is enjoying retirement in Hawaii Kris Kristofferson / AdMedia/Image Collect While Kris is officially retired, he still loves to perform on the island and will join local musicians to surprise tourists. Many of them reportedly don’t even believe it’s him when they see him on the island! As local journalist Ted Bartimus told Closer Weekly, “Tourists would do a double-take. I once watched a fellow off a tour bus stare at Kris for 10 minutes, then turn to his wife and say, ‘Naw, that’s not him.
