A white cake with splashes of raspberry Jell-O and a deliciously creamy frosting make this a fun (but super simple) Raspberry Poke Cake! ANOTHER FRUITY POKE CAKE Poke cakes are one of my favorite easy desserts to make. I fell in love with this Raspberry Poke Cake from the moment I took the first bite! The raspberry flavor is just the right amount, not too overwhelming but strong enough for you to know what it is. And just like all my other poke cakes, this one is SUPER simple to make that even beginners can knock it out of the park with no problem! If you add some coconut on the top of the frosting – you can even make this taste like a Raspberry Zinger Cake FREQUENTLY ASKED QUESTIONS:  Can I use a different cake flavor? Sure, you could try a yellow or French vanilla cake mix instead. Can I use different frosting? Certainly. Canned frosting is possible or any other frosting you enjoy. What else can I add? I think coconut could be added on top to make it like a Raspberry Zinger Cake. Can I use other Jell-O flavors? Yes, other Jell-O flavors can be used. If you do this, then the flavor will obviousy change, but it will still be yummy. I have a ton of Poke Cake recipes on my site. Here are some of my favorites: – Hawaiian Jello Poke Cake– Banana Pudding Poke Cake– Carrot Poke Cake– Butterfinger Poke Cake– Reese’s Peanut Butter Poke Cake How do I store this Poke Cake? When you aren’t serving this cake, it needs to be covered and kept in the fridge because of the frosting and the Jell-o ingredients. They’re perishable. The longer the leftovers are kept, the soggier they can become and the texture can change.Any leftovers should be covered and kept in the fridge for up to a week or can be kept frozen for up to 3 months. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) white cake mix – this is my suggestion on what to use as it works best, but other ideas can be found in the FAQ section. egg whites – if you’re sticking to the white cake mix like I suggest, you’ll only need the egg whites when mixing it. Raspberry Jell-O – I used the Jell-O brand, but the store brand or any other gelatin will work fine. Changing up the Jell-O flavor is possible and would give you other flavored poke cakes. See more ideas in the FAQ section and in the Craving More Recipes section. water – you need boiling water and cold water to help activate the raspberry gelatin. instant pudding mix – I suggest using vanilla pudding mix and be sure to grab the instant, not the cook n serve kind. whipped topping – I use Cool Whip, but any brand will work. HOW TO MAKE RASPBERRY POKE CAKE Prepare the white cake mix with the ingredients needed to make the cake: egg whites, oil and water per the directions on the back of the box for a 9×13-inch cake. Once it is done baking, place it on the counter and let it cool for 5 minutes. Using the handle of a wooden spoon, poke holes into the cake about 2 inches apart. Add the raspberry jello and boiling water to a large, heatproof bowl and whisk until the gelatin is dissolved. Add the cold water to the bowl and whisk to combine. Pour the Jell-O all over the cake, focusing on the holes the most. Place the cake into the fridge for 2 hours. In a large bowl, whisk together the vanilla pudding with the milk for 1 minute. Add the whipped topping and stir to combine until there are no streaks left. Smooth the frosting on top of the cake and place it back into the refrigerator for 2 hours to set up. Garnish with raspberries if using and serve immediately. UPDATED 6/12/2024 Dolly Parton, the 11 Grammy Award winner, had always claimed that her family was poor while she was growing up. She and her 11 other siblings lived in a two-room log cabin, and yet she loved her humble beginnings so much that it inspired her to build a replica of her childhood home in the Dollywood theme park located in Pigeon Forge, Tennessee. A signpost outside the house reads, “These mountains and my childhood home have a special place in my heart. They inspire my music and my life. I hope being here does the same for you! Dolly.” This pretty much sums up the influence that cabin has had in her development as both a person and a musical artist. And, it should be noted, that Dolly reflected on where she grew up in the lyrics to “My Tennessee Mountain Home”: In my Tennessee mountain home, Life is as peaceful as a baby’s sigh; In my Tennessee mountain home, Crickets sing in the fields nearby.” The Original Log House At the time the Partons were living in the original home, there was neither electricity nor running water. The cabin has a kitchen with a table that seats six, a small pantry and stove, a washing basin between the kitchen and bedroom, and a two-thirds wall separating the kitchen from the only bedroom in the house. YouTube Video Screenshot This type of house was quite common in the mountains of Tennessee at the time of Dolly’s childhood. Growing up, she revealed, they used to catch fireflies in mason jars and kept them in their rooms for light. Despite not having much as they were growing up, neither she nor her siblings ever thought they were “poor,” because they were rich in things that money couldn’t buy, like love, kindness, and understanding. She has jokingly said in interviews that she spent a fortune making that cabin look as poor as it did when she was a child. The home is still standing in Locust Ridge, nearby Evans Chapel. YouTube Video Screenshot The Replica The replica of the house was built by Dolly’s brother, Bobby, with the design and furnishing of the interior by her mother, Avie Lee. It stands near the entrance of the Dollywood theme park, thus serving as a good place to start exploring Dolly’s history. Most of the items displayed in the cabin are preserved family treasures that were brought from the old house. YouTube Video Screenshot The kitchen has on display dishes, cast iron pans, and a butter churner, while its walls are covered with floral wallpaper and old newspapers as used in the original for insulation during cold weather. The dining area is furnished with a small table set with plates and aluminum coffee cups. Shelves are lined with jars and tins, and baskets filled with firewood sit on the floors. In the bedroom, there is a bed with a couch pushed against it and Dolly’s old pictures hanging above the bed. One thing you may notice is that there are no books in evidence — truth be told, there weren’t any in the original home either, outside of the Bible. “We weren’t allowed to bring books home from school because we had so many little kids in the house,” Dolly related to ABC News. “They would just chew them up, tear them up, pee on them, whatever. So mama just read the Bible. Nobody touched the Bible. She used to tell us all of the stories from the Bible and make them beautiful, like Joseph and the coat of many colors. She read that to me when she was making my little coat of many colors to make me proud of it.” Observes msn.com, “The replica of Dolly’s childhood home not only honors her roots, but also embodies the essence of her character — resilience, creativity and a deep connection to her family and heritage. But when it comes to the cabin replica, it “isn’t about consumption; it is about nostalgia. Although we tend to think of nostalgia as a desire for the past, the word comes from the Greek nostros, which means a longing for home.
