Quorn Meatless Roast (Vegetarian Thanksgiving Turkey Substitute)

This recipe is originally from Brigitte Dale. It's been my go-to vegetarian alternative to a Thanksgiving turkey for years. It can also be made vegan. Since Brigitte removed the recipes from her web site a few years ago‚ I'm posting my adaptation of the recipe here. Some people like Tofurky or Gardein replacements for Thanksgiving turkey‚ but I prefer the texture of Quorn's meatless roast. (Just know that Quorn's advice about how to cook the fake turkey is terrible. Ignore it.) Note that although the prep time is listed as 24 hours‚ most of that is inactive--just thawing and marinating the roast--and you can do it in far less time if needed. Regardless‚ you'll only need to spend about 30 minutes of active work in prep time. I move the Quorn roast from the freezer to the fridge the day before I'm going to serve it. The evening before serving it‚ I prep it to marinate overnight‚ so that it's ready to cook the next day. If you forget to thaw the roast‚ skip straight to marinating. -- posted by recipemonkey

Buttery Keto Biscuits

Tried this today. Super yummy. From Keto &; Low Carb Ideas (a group on Facebook). I only topped with butter and dried parsley. I think more salt/garlic toppers would be overkill. -- posted by WI Cheesehead

Cheesy Cornbread With Tomatoes

Cheesy Cornbread With Tomatoes

"A true bake-and-take‚ this made for any gathering standout makes a strong argument in favor of savory cornbread (as opposed to sweeter cake-like versions). Adding salty‚ creamy feta means flavor runs deep‚ but a fresh cheese‚ like goat‚ or firm cheese‚ like cheddar‚ works too. If you prefer a sweeter cornbread‚ you can add an extra 2 Tbs sugar to the batter." -- posted by Bren_in_L.R.
