With just a few ingredients, this Crock Pot Crack Chicken is amazingly easy, tasty and super delicious. It’s one recipe you’ll be making over and over again! A SUPER EASY SLOW COOKER MEAL Crack Chicken has become one of my favorite meals. Now, don’t fuss at me. This is the name it was given so I didn’t make this up. I would change the name but this is literally the name everyone knows it by and searches for it by this name. Anyhow, the combined flavors are super simple but just burst in your mouth with each and every bite. The main characters of this dish are chicken, ranch, bacon and cheese. How can you go wrong with that combination? Made this just now and wow! Everyone loved it. So many ways to use it too! Thank you for another winning recipe!– Polly FREQUENTLY ASKED QUESTIONS: Can this recipe be doubled? Yep! Just make sure your crock pot is large enough to handle doubling the ingredients. The cook time might be a tad bit longer for the chicken if you are having to layer the chicken in the crock pot. What is the best way to serve crack chicken? This can be served with some egg noodles or as a sandwich (our preferred way to enjoy it.) You can even serve it as a warm dip! Just leave it in the slow cooker and guests can serve themselves. If you like buffalo chicken dip then you would love this as a dip. Could I use chicken thighs instead of breasts? Of course! You can use boneless, skinless chicken thighs or chicken tenders. Can this be cooked on high? Yes. You would just cut the time in half (about 2-3 hours). In general, I think the chicken shreds easier after it has been cooked a long time on low but if you are in a hurry, you could make this work by cooking on high. Why do you say not to remove the lid while cooking? It is very tempting to open the lid and to continue to check on your meat. However, this just slows down the coming process and I think it can make the meat a bit more tough. How do you store leftovers? Since this Crock Pot Crack Chicken Recipe contains both chicken and cream cheese it does need to be refrigerated. Place in an airtight container or ziploc bag and it should be good for up to 3 days.To reheat, just place in a sauce pan on the stove and heat on medium until heated through (if necessary, add a splash of chicken broth to loosen it up a bit.) Can crack chicken be frozen? This can also be frozen. Place cooled Crack Chicken in a freezer bag and press out all the air and it should remain good in the freezer for up to 3 months. To reheat, let defrost in refrigerator and then heat up on stove until heated through. INGREDIENTS NEEDED: (FULL RECIPE AT THE BOTTOM OF THE POST) chicken breasts – see my FAQ’s above for different options. chicken broth – if you are sensitive to sodium, I would recommend using a low or no sodium broth. ranch seasoning mix – you can use packaged ranch mix or make your own homemade ranch seasoning. cream cheese – forgot to take out your cream cheese to soften to room temperature? No problem, I have a great tip on how to soften cream cheese fast. cheddar cheese – we use sharp cheddar in this recipe, you can use mild if you’d like or even switch it up to a Colby Monterey Jack cheese. I like to freshly shred it but the bagged stuff is fine. bacon – I fried it up fresh but you could use precooked bacon. I like the crunch that freshly cooked bacon adds to this. green onions – if you don’t like green onions, just leave it out. it does add fantastic flavor though! HOW TO MAKE CROCK POT CRACK CHICKEN: Spray the inside of a 6-quart oval slow cooker with nonstick cooking spray. Lay the chicken breasts in an even layer in the bottom of the slow cooker. Pour the chicken broth over the chicken breasts, then sprinkle the ranch seasoning evenly on top. Add the lid and cook on high for 2 hours or low for 4 to 5 hours. Do not remove the lid while the chicken is cooking.  After the chicken cooks, use two forks to shred the chicken. Add the cubed softened cream cheese. Stir until creamy and the cream cheese is melted.Next, add half the cheddar cheese, half the crumbled bacon, and half the green onion. Stir to combine. Top the crack chicken with the remaining cheese and bacon. Place the lid back on the slow cooker for 5 to 10 minutes, just long enough to melt the cheese. Crock Pot Sloppy Joe Casserole is an easy casserole to make! Layers of cheesy hash browns, ground beef and sloppy joe filling make it a meal! A WHOLE MEAL MADE IN THE SLOW COOKER! This Crock Pot Sloppy Joe Casserole is a whole meal in one. It’s a very simple recipe but it is a fun and new way to eat your meat and potatoes. It only takes a short time to throw it all together then you let the slow cooker do all the work! Definitely a family-friendly meal! I made this when my parents came for an afternoon visit. My husband and my parents loved this one! My husband has requested it almost weekly since that visit. I typically serve it alongside a microwave steamer bag of vegetables. Thank you!– Allison FREQUENTLY ASKED QUESTIONS: Could you add vegetables to this?  Feel free to add in any other veggies or seasoning that you enjoy. Green peppers, red peppers or even corn would be great in this!  Do you have to use shredded hash browns? You can substitute the shredded hash browns with southern style hash browns, which are the smaller cubed potatoes or you can use the Potatoes O’Brien that have peppers and onion mixed in with the cubed potatoes. What can I serve with this casserole? I always serve it with a side salad and sometimes some cornbread. But you could do steamed veggies as well! Do I need to use an oval slow cooker? I do recommend only using an oval slow cooker. Because there is less surface area in a round slow cooker, this would take longer to cook and I’m not sure it would cook as evenly. How do I store leftovers? Store in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) frozen shredded hash brown potatoes – you only need to slightly thaw these. They don’t need to be fully thawed – it’s okay if they’re still a little cool. condensed cheddar cheese soup – if you don’t want this much of a cheese flavor, just grab another can of condensed soup you like. Also, if you have any sensitivity to sodium, I would choose a low or no sodium option. egg – this acts like a binder to help it all hold together. salt and pepper – you could add other seasonings if you like. Garlic powder would be a good addition. ground beef – you could also use ground turkey or chicken. onion – if you don’t like onion, just leave it out. sloppy Joe sauce – if you don’t want to use the canned stuff you can make it homemade. I have a homemade sauce recipe in my other recipe for Sloppy Joe Bubble Up and also in my Crock Pot Sloppy Joes recipe. shredded cheddar cheese – any type of shredded cheese you like will work here. If you want a kick of spice, try using pepper jack! HOW TO MAKE CROCK POT SLOPPY JOE HASH BROWN CASSEROLE: Spray a 5-6 quart oval crock pot (slow cooker) with nonstick cooking spray. In a large bowl, combine shredded potatoes with the soup, egg, salt and pepper. Stir well then spread it in the bottom of the crock pot. In a large skillet, over medium heat, brown and crumble ground beef along with chopped onion. Cook until beef is no longer pink. Drain excess grease. Stir in sloppy joe sauce. Spoon sloppy joe mixture over hash brown mixture in crock pot. Cover and cook on low for about 4 to 4 1/2 hours. About 10 minutes before it is ready, add about a cup or so of shredded cheddar cheese to the top of the casserole. Then put lid back on crock pot and allow the cheese to melt. Then serve!
