TENDER SHREDDED BEEF DINNER This Crock Pot Catalina Roast Beef is an easy, flavorful twist on a classic pot roast dinner. A chuck roast with hearty vegetables and a flavorful sauce is a great, affordable and filling meal. I know it might sound so weird with the Catalina dressing, but the flavors come together perfectly, giving you tender meat and veggies that so delish! I’ve used this combo with chicken thighs where it really amps up the flavor of the meat without specifically tasting the dressing. FREQUENTLY ASKED QUESTIONS:  What to serve with Crock Pot Catalina Roast Beef? This is a whole meal in itself, but I think you can really fill bellies by serving it with some Green Beans like I did and then some Dinner Rolls, Garlic Bread, or some other crusty bread to dip in the extra sauce, and add a nice side salad. NEver a bad option to add some bread and salad. What meat can I use instead of chuck roast? A few other options to use are a round roast, rump roast, or a pork shoulder would even work. Any tougher cut of meat will work because we are cooking it slow and for a long time so even those tougher cuts can turn out tender. What else can I add to this crock pot dinner? Want more veggies, try adding parsnips and mushrooms. You could even try green beans or peas during the last hour of cooking. Like some heat? Give this dish a splash of hot sauce or a dash or two of red pepper flakes. Enjoy more herbs? Try adding some fresh thyme, rosemary, or bay leaves to the mix. Can I make a sweeter glaze? Yes, if you want a touch of sweetness, add a couple tablespoons of brown sugar or honey. Do I shred or slice the Roast Beef? Either will work in this recipe. I guess it depends how you want to serve it. But this meat will be super tender and will be very easy to shred with forks or meat shredding claws. If you’re going for a classic and clean presentation, go for the traditional slice instead. Should I cook on low or high? I like to cook this on low and let it cook slowly for the full 8 hours so the meat gets super tender. Sometimes when you cook it on high, it comes out more tough. Chuck roast is a tougher cut of meat so it really needs to cook low and slow for best results. This is n’t the kind of meat you want to rush along. How to store leftovers? After leftovers have cooled, they should be transferred to an airtight container and can be kept refrigerated for up to 4-5 days. You can freeze leftovers for up to 3 months. INGREDIENTS NEEDED: (SEE RECIPE CARD BELOW FOR THE FULL RECIPE) celery – I just use the heart of the celery but you the stems with leaves are all edible. carrots– In addition to the carrots, celery, potatoes, and onions, you could add some sliced mushrooms. onion– Be sure to place all the veggies evenly on the bottom of the Slow Cooker so they cook evenly and absorb all the sauce that they can. baby potatoes– Yukon golds or red potatoes hold up best in my opinion, but if you cut up big chunks of russets, they can be used in a pinch. Sweet potatoes are another option. chuck roast– scroll back up to the FAQ section and you will see what other meat options you can use if you need a different idea. But something I really want you to know is, the specific weight of the roast isn’t super important. No need to stress about the exact size of the roast, anything around 2-3 pounds works beautifully, and you can even scale the dressing back to half a bottle, if you’re using a smaller cut. Catalina dressing– if you don’t have this, you can try French dressing or Russian dressing so you can get a similar and sweet and tangy dressing flavor. dry onion soup mix– If you’re out of the packets, you can use some Homemade Onion Soup Mix if you have it already, or just mix up a blend of dried onion flakes, beef bouillon, and garlic powder if you’re really in a pinch. HOW TO MAKE CROCK POT CATALINA ROAST BEEF: Add the celery, carrots, onions and baby potatoes to a 5-6 quart slow cooker. Place the chuck roast on top of the vegetables. In a bowl, mix together the catalina dressing with the dry onion soup mix. Pour the mixture evenly over the chuck roast.  Cover and cook on low 8 hours. Note: DO NOT open the lid while cooking. Just cover and let it cook. Everytime you remove the lid to check on it, it will take longer to cook and may not come out as tender. When ready, shred the meat (remove any fatty bits) then serve! Take, for instance, the recent spate of incidents on public transit where individuals—often from marginalized communities—express their frustrations in creative ways, such as dousing sleeping commuters with accelerants and striking a match. If your immediate reaction is one of alarm, or heaven forbid, a desire to avoid such encounters, allow me to diagnose you: you’re likely harboring deep-seated bigotry, the kind that masquerades as “common sense.” Let’s unpack this with the intellectual rigor one expects from someone holding not one, but two doctorates in Intersectional Empathy Studies. First, consider the offender. Repeat offenders, as the term implies, are individuals who’ve been given multiple opportunities by our compassionate system to refine their craft. They’ve navigated the revolving door of justice, emerging each time with fresh insights into societal inequities. To label their actions as “criminal” is to ignore the root causes: systemic oppression, economic disparity, and perhaps a childhood devoid of artisanal kale smoothies. Who are we to judge when a flame-lit awakening on the F train might just be a cry for help? Now, if you’re the sort who clutches your pearls at the thought of waking up in a fireball, ask yourself: why? Is it because you value your own hide over the offender’s right to unburden themselves? This smacks of privilege. Studies (which I may or may not have peer-reviewed myself) show that concerns about violent crime disproportionately affect those who can afford to think about tomorrow. The truly progressive among us understand that safety is a construct, much like gender or punctuality. Demanding stricter enforcement or, gasp, actual incarceration for repeat acts of arson is code for racial animus. After all, statistics—those pesky things—might suggest demographic patterns, but interpreting them as anything other than evidence of bias is itself biased. Imagine a world where we prioritize rehabilitation over reactionism. Instead of bolting awake to the scent of singed eyebrows, we could offer the offender a subsidized therapy session right there on the platform. “Tell me about your fire,” the counselor might say, as emergency services hose down the charred remnants of your nap. This is equity in action: redistributing discomfort from the vulnerable to the complacent. Of course, detractors will whine about “victims’ rights” or “public order.” But let’s be honest—these are dog whistles for maintaining the status quo, where people can doze on subways without fear of spontaneous combustion. Such expectations perpetuate inequality. If you’re not willing to sacrifice a little epidermis for the greater good, you’re part of the problem. In conclusion, next time you board a train and eye that loiterer with a lighter, check your prejudices. Embrace the warmth of progress, or admit you’re just another bigot afraid of change. After all, getting lit isn’t always a bad thing—unless you’re literally on fire.
